Liver is one of the healthiest foods on the planet. Chock full of usable vitamin A, iron, choline, and other minerals and nutrients, it's quite a travesty that we don't eat as much of it as our ancestors (and even grandparents) did.
Whether it's a blessing or curse that my husband is the pickiest eater on the planet, I'm not sure. But it does make me creative in the kitchen in figuring out ways to get him to eat really healthy things without his taste bud red flags going haywire! :)
Enter Operation Liver Burgers! The test was to see how to hide liver in normal, every day foods he likes, without him having weird texture or taste issues.
This was experiment #1 and very effective! He loved them! :)
