Breakfast is usually the most difficult meal for folks to change when going Paleo. Why? Because they are used to eating crap food like cereal, donuts, and "healthy" granola bars.

Here's my favorite of late... Scrambled beef and Kale. It's great because it only takes 5 min. from start to finish and is chock full of yummy vitamins... the fat it's cooked in allows you to absorb all those fat soluble vitamins!
In a skillet over medium heat, brown ground beef until almost finished. Add kale and saute until dark green and cooked through. Salt as desired. Enjoy!
